The activity was great fun & big thank...Hi Liz!<br />The activity was great fun & big thanks to all who went through the trouble to make it happen! I was asked by a few to share my recipe for my soup and I figured what better place to post it than the blog?! Hope you don't mind!<br />Here it is:<br /><br />Minnesota Wild Rice Soup<br />1/4 cup butter<br />1 medium chopped onion<br />1/4 cup flour<br />3 cups chicken broth<br />1 cup cooked wild rice<br />1 cup cooked white rice<br />1 cup diced ham<br />1/2 cup finely shredded carrots<br />3 Tbs. sliced almonds<br />1/2 tsp. salt<br />1 pint half and half (or milk)<br />snipped fresh parsley<br /><br />Saute onion in butter. Blend in flour and cook for 5 min. Stir in broth. Cook to a simmer, stirring. Add ham, rice, carrots, almonds, salt and pepper to taste. Simmer for 10 minutes. Add parsley and half and half.
