ReplyDeleteThe activity was great fun & big thanks to all who went through the trouble to make it happen! I was asked by a few to share my recipe for my soup and I figured what better place to post it than the blog?! Hope you don't mind!
Here it is:
Minnesota Wild Rice Soup
1/4 cup butter
1 medium chopped onion
1/4 cup flour
3 cups chicken broth
1 cup cooked wild rice
1 cup cooked white rice
1 cup diced ham
1/2 cup finely shredded carrots
3 Tbs. sliced almonds
1/2 tsp. salt
1 pint half and half (or milk)
snipped fresh parsley
Saute onion in butter. Blend in flour and cook for 5 min. Stir in broth. Cook to a simmer, stirring. Add ham, rice, carrots, almonds, salt and pepper to taste. Simmer for 10 minutes. Add parsley and half and half. Heat to serving temperature. Enjoy!
